Thai Pepper Garlic

Note: This recipe is calibrated for two people.

  1. Coat bottom of pan with oil
  2. Finely dice all garlic
  3. Mix pepper, stock, and sugar in bowl
  4. Coat the primary food ingredient in the mixture
  5. Heat the pan very hot
  6. Sauteé the garlic until very lightly browned. Letting this step go too long will burn the garlic in the end dish.
  7. Add the coated food and stir.
  8. Add the fish sauce and stir.
  9. At this point,the dish will tend to get dry and sticky. Keep adding water until the food finishes cooking, maintaining the consistency of the sauce.
  10. Serve over rice and garnish with cilantro.
